Ingredients:
1/4 kg carrots, 2 medium sized onion, 1 small bunch coriander, 2 cms piece ginger, 1 lit water or vegetable stock, 1 tablespoon lemon juice, 1 teaspoon oil, Salt & pepper to taste.
Preparation:
- Wash & slice the carrots (do not peel).
- Wash, peel & slice the onions.
- Wash the coriander sprigs to remove all the dirt from the roots. Tie them together with a thread.
- Wash the ginger well (do not peel or chop).
- Heat oil in a pressure cooker & add the carrots & onion.
- Stir well & cook on a low flame till the vegetables are done.
- Add the coriander bunch & ginger piece to the vegetable. Pressure cooks the contents for 15 minutes.
- Cool & then discard the coriander bunch & ginger piece.
- Blend the soup in a mixer
- Reheat & season with lime juice, salt & pepper.
- Add little water or stock, if desired.
- Garnish with coriander & serve hot.
